Bathgate Farm Produce – 23 April 2020

Alternative options for obtaining your produce:

  1. Preorder and collect at the market. For small orders we will pack at the market and have them ready for collection after 9.30am. Submit your order by 5pm Friday. Payment can be made using ‘tap-and-go’ at the market, cash or bank transfer.
  2. Bulk orders. If you are collecting vegetables for friends and family this option may suit. Submit your order by Monday evening. Orders will be boxed and can be collected from Thursday afternoon at the farm or the market.

Celeriac – seriously underrated, but versatile, winter stalwart.

Celeriac

Celeriac is the weird, knobbly root vegetable that customers see at our Farmers market stalls from late summer to winter. We usually don’t make a big effort to promote it because it is one of the secrets of the restaurant industry. Now in the lead up to winter, it is time to promote this amazingly versatile vegetable for use at home.

Celeriac is a variety of celery, Apium graveolens, that has been bred for its swollen stem base as well as edible stems and leaves. The crop requires minimal chemical disease control, compared with celery, due to the stem base being the main part of interest for eating

Celeriac has an ugly appearance, which can be daunting for the home cook, but when topped, tailed and peeled, the beautiful white flesh within is revealed. Its flesh has a smooth, stringless texture and a mild, celery flavour. It can discolour if not used quickly, so if preparing in advance, place it in water with a dash of lemon juice or vinegar.

In the kitchen the uses of celeriac are many and varied, from roasting, to casseroles, salads and pickles. One of its major attributes is its savoury flavour and it can be used as a component of mirepoix, the classic aromatic flavour base for many soups, stews and casseroles.  A mix of carrot, onion and celery or celeriac is slowly cooked in butter or oil to use as the foundation for many dishes.

Celeriac is low in carbohydrates, so makes a good substitute for potatoes and other starchy foods. It is also a good companion for potatoes and adds a deliciously savoury flavour when the puree is mixed with mashed potato or when sliced and combined  with potato in a gratin.

Used raw, celeriac is a perfect for winter salads and slaws. Finely shred it and combine with other crisp vegetables such as shredded cabbage, kohl rabi, apple or daikon, finish with a light, lemony mayonnaise. Celeriac is the key ingredient of romoulade – the famous French salad of shredded celeriac dressed with a light creamy mayonnaise. Shredded celeriac can also be pickled and lacto-fermented by itself or with other vegetables to make delicious, crunchy preserved vegetables.

Celeriac combines well with other root vegetables such as fennel or leeks to make beautiful creamy winter soups.

Summer vegetables galore at Bathgate Farm

At last the summer crops are in full production. Plenty of new lines to try at the market.

Tomatoes and other fruit

  • Heirloom varieties including beefsteaks – rouge de mamande, brandywine, black krim; Verona orange and ananas noir.
  • Salad varieties: money maker, juanne flamme, tigerella, zebras.
  • multi-coloured large cherry sized varieties,
  • Chillies:  jalapeno
  • Peppers: corno de rosso;
  • golden nugget squash;
  • eggplants – several types including Lebanese, ping tung long, Listada.
  • Pickling cucumbers

Potatoes:

New season early harvest potatoes.

  • Norland – pink skinned, round, white flesh, waxy. Ideal for boiling, salads, casseroles;
  • Delaware – white skin and flesh. Newly dug so more waxy than usual.

Stems and roots:

  • pickling size brown onion;
  • spring onions;
  • beetroot – large sized standard, golden, white and candy stripe and mangel wurzels;
  • radish

Greens:

  • Perpetual spinach, silver beet and ruby chard;
  • Tuscan kale (cavolo nero);
  • Bitter green salad mix;
  • Radicchio, frisee and scarole.

Asian Greens:

  • pak choy, green and white stem;

Winter at Bathgate Farm

Despite the cold and wet conditions we are still producing lots of vegetables for winter markets.

Potatoes

    • Rodeo – semi floury, multipurpose potato for boiling, mashing and roasting;
    • Ranger Russet – very floury potato for chipping, but also brilliant baked in its jacket or roasted. Needs to be watched when boiled as floury potatoes have a tendency to break apart if over cooked.

Pumpkins

  • we have lots of delicious Argentine pumpkins. Perfect for soups or roasting. Sweet firm flesh.

Stems and roots:

  • carrots – small supply of orange and multi-coloured bunches – be early;
  • celeriac;
  • fennel;
  • parsnips;
  • turnips;
  • leeks;
  • beetroot.

Greens:

  • Tuscan kale (cavolo nero);
  • Bitter green salad mix;
  • rocket;
  • cabbages (small supply).

Asian Greens:

  • pak choy;

  • Chinese cabbage (loose leaf type);

Potatoes

    • Kipfler – waxy fingerling variety. Delicious however used;
    • Norland – red skinned waxy ideal for boiling and salads;
    • Delaware – WA old favourite, general purpose

  • Tomatoes – multi-coloured large cherry sized varieties;
  • Chillies: poblano, Anaheim, jalapeno
  • mini-capsicum
  • fancy peppers (cubanelle, bulls horn)
  • tomatillos;
  • golden nugget squash;

Stems and roots:

  • carrots – last of the summer crop this week. Purple and yellow varieties only;
  • red onions- 1sts and seconds;

    • Royal Blue –  yellow fleshed slightly floury potato, makes the best mash, good roaster and chipper.
    • Norland – red skinned waxy ideal for boiling and salads;
    • Delaware – WA old favourite, general purpose

  • carrots – delicious sweet rainbow and nantes varieties;
  • spring onions;
  • red and white salad onions;
  • early brown onions;
  • fennel;
  • parsnips;
  • Hamburg parsley.
